Las Tapas

Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients
  • 10 large eggs
  • 1/4 cup milk, half-and-half, or heavy cream
  • Kosher salt and freshly ground black pepper
  • ?2 tablespoons extra-virgin olive oil
  • 2 cooked Uncle Charley’s Chorizo Grillers, skin removed and cut into a 1/4-inch dice
Instructions
  1. Finely chop chorizo. Cook in oil in a 12-inch nonstick skillet over moderate heat, stirring until browned, about 4-5 minutes.
  2. Whisk eggs together in a bowl and stir into chorizo. Cook, stirring until eggs are scrambled and just set, about 5 minutes. Serve immediately.
